Paddle Dryer in Food Industry
Food processing presents a specific drying challenge: the product cannot tolerate contamination, temperature spikes, or moisture inconsistency. A single batch failure in starch drying or animal feed processing costs more than the energy bill. That is why food manufacturers specify indirect-contact thermal processors over conventional rotary or hot-air systems.
AS Engineers manufactures Paddle Dryers specifically configured for food and agro-processing applications. Every food-grade unit is built in SS304 or SS316 with electropolished contact surfaces, fully enclosed processing, and no product-air contact during drying. The result is a clean, consistent dried product with no cross-contamination risk.

Cooling
Remove heat from a process mass with cold water or glycol (up to to -40 °C) in a controlled moisture-free environment. Dual-zone temperatures are also possible in the system.

Roasting
We have custom-design Paddle Dryers where you can roast the starches and grains to weaken their gas holding capacities.

Heating
Heat a process mass for tempering, cooking, or pasteurization. The heating medium can either be Steam, a circulated Thermal Fluid, or Hot Water.
We provide a fully enclosed Paddle Dryer that ensures safe and hygienic handling of food products. Additionally, our design pays special attention to provide accessibility for cleaning and maintenance purposes. We also provide end-to-end customization for the Paddle Dryer that fits your needs and serves your purpose.

Drying Starch
Paddle dryers can be used for a variety of applications, including drying modified starch. Unlike native starch, modified starch should be kept at a certain degree of temperature while drying in order to attain the desired characteristics.Similar approach is undertaken while processing Wheat. The Paddle Dryer is used as a reactor to weaken the Wheat’s gas holding capacity. In another reactive method, Wheat powder is roasted, which enables it to be used in food products.
Sterilizing Animal Feed
A challenge for fodder is the partial sterilization of animal feed, or additives. While processing the animal feed, the target is to reduce the amount of microorganisms below a critical limit. This can be achieved by increasing the product’s temperature to 75–80 °C from room temperature. In order to accelerate the desired reduction in bacteria, steam is fed into the process. The paddle geometry and alignment is adjusted to ensure optimal residence time and even transport of the product through the machine.
AS Engineers’ Paddle roaster/cooler lies at the heart of the process. The Paddle Dryer has a heated or cooled trough that contains heated or cooled paddle shafts which are allowed to rotate. The product inside the dryer bed comes in total contact with the walls of the shafts, trough, and the paddles, thereby heating or cooling the product evenly. The feed is pushed continuously into the front of the machine. The trough leans towards the unloading position slightly being oriented at a low angle of inclination. This makes the product move towards the outlet via gravity. The paddles inside the Paddle Dryer are designed for maximum heat transfer even when they do not have any transport function. The product exits from the machine via the overflow unit on the outlet side.
Our paddle roaster/cooler, with its low rotation speed of the paddle shaft and indirect roasting or cooling principle is responsible for the equipment’s zero substance emission. However, if one wants to use a gas cleaner, like a gas scrubber or gas filter, one can keep the size small due to the low gas flow rates. Once this heating and cooling process is completed, the final dried product is packed in bulk bags.

Applications: Paddle Dryer in the Food and Agro-Processing Industry
Starch Drying and Modification
Modified starch requires precise temperature control during drying to achieve the desired gelatinization characteristics. A standard dryer cannot hold the product at a target temperature band — it simply drives out moisture at whatever rate the heating medium allows. The paddle dryer’s dual-zone configuration holds different sections of the machine at different temperatures, allowing staged processing within a single pass. Wheat powder roasting — where the objective is to weaken gas-holding capacity for bakery applications — uses the same roasting mode.
Animal Feed Sterilization (DDGS, Rice Bran, Fish Meal)
Dried Distillers Grains with Solubles (DDGS), rice bran, and fish meal carry microbial loads from the upstream fermentation or extraction process. The target in processing is to reduce viable microorganism count below regulatory limits. This requires sustained product temperatures of 75–80°C for a controlled residence time, not just surface heating.
The paddle dryer’s plug-flow mechanism maintains a defined residence time window. Paddle geometry and shaft speed are engineered to prevent short-circuiting — where some product passes through faster than the rest. Combined with steam injection (where required), this gives food manufacturers a verifiable, repeatable sterilization-equivalent process step.
Spent Grain Drying (Breweries and Distilleries)
Spent grain from breweries and distilleries is a high-moisture, sticky feedstock typically arriving at 75–80% moisture. Left untreated, it has a shelf life of days. Dried to below 10% moisture, it becomes a saleable animal feed ingredient. The paddle dryer handles high-moisture sticky feeds without the bridging and wall-adhesion problems that affect screw dryers.
Cooling of Hygroscopic Powders
Beverage powders, instant food mixes, and hygroscopic granules that exit a high-temperature process need controlled cooling before packaging. Exposing them to ambient air introduces uncontrolled moisture pickup. The paddle dryer configured for cooling uses cold water or glycol (down to –40°C) circulated through the same hollow shafts and jacket, bringing the product to a defined outlet temperature in a closed, moisture-free environment.
Food-Grade Construction Options
The material of construction (MOC) decision depends on the product being processed and the cleaning protocol the plant operates.
| Material | Surface Finish | Recommended For |
|---|---|---|
| SS304 | 2B or electropolished | Dry, non-acidic food powders: starch, grain, DDGS |
| SS316 | Electropolished | Acidic or saline products: fish meal, fermentation-derived materials |
| SS316L | Electropolished + passivated | Pharma-adjacent food ingredients, nutraceuticals |
All food-grade units are fully enclosed. No open-top trough configurations are supplied for food applications. Access ports are positioned for CIP (clean-in-place) compatibility. The wedge-shaped paddle geometry is self-cleaning — the intermeshing action prevents material buildup between adjacent paddles without mechanical scrapers.
Vacuum Operation for Heat-Sensitive Ingredients
Spice oleoresins, probiotics, certain enzyme preparations, and nutraceutical actives cannot withstand temperatures above 60°C without activity loss. A standard atmospheric paddle dryer operating on steam would exceed this limit.
The vacuum paddle dryer reduces the boiling point of moisture inside the product by lowering chamber pressure. At –0.8 bar gauge vacuum, moisture evaporates below 60°C, enabling effective drying without thermal damage to heat-sensitive actives. The same indirect conduction mechanism applies – no product-air contact, minimal off-gas volume.
This is a configuration option on AS Engineers’ food-grade paddle dryers. Not all food processing applications require vacuum operation; the process engineer will specify based on the product’s thermal sensitivity.
Process Modes Available in a Single Machine
One of the structural advantages of the paddle dryer for food manufacturers is that heating, cooling, roasting, and sterilization are all possible within the same equipment platform – only the heating medium and operational parameters change.
| Process Mode | Heating/Cooling Medium | Typical Application |
|---|---|---|
| Drying | Steam (up to 14.06 kg/cm²) or thermic fluid (up to 400°C) | Starch, DDGS, rice bran |
| Cooling | Cold water or glycol (to –40°C) | Hygroscopic beverage powders, post-process cooling |
| Roasting | Thermic fluid at elevated temperature | Starch modification, wheat powder roasting |
| Sterilization | Steam with defined residence time control | Animal feed, fish meal |
| Vacuum Drying | Steam at reduced chamber pressure | Heat-sensitive nutraceuticals, probiotics |
Operational Characteristics
The food industry runs multiple product SKUs through the same processing lines. Equipment that requires extended cleaning cycles, specialized maintenance, or long product changeovers is a production liability.
The AS Engineers food-grade paddle dryer is designed for minimal dead zones, quick shaft removal from the top (vertical shaft extraction), and accessible bearing housings. No metal-to-metal contact between moving parts means there are no steel wear particles entering the product stream – a specific requirement for food-grade equipment qualification.
The low shaft speed (typically 5–25 RPM depending on feed characteristics) keeps mechanical loading low, extending the service interval on seals, bearings, and drive components. These are not self-reported claims – they follow directly from the equipment’s operating principle.
For planned and emergency maintenance, AS Engineers’ Paddle Dryer Services team provides on-site support, spare shaft and paddle assemblies, and seal replacement.
Trial Before Capital Commitment
Food processing equipment purchases require internal sign-off, FSSAI-related process documentation, and vendor qualification. AS Engineers offers a Paddle Dryer Rental Service that allows food manufacturers to run trial batches on actual product before committing to a capital purchase. This reduces the approval cycle for procurement teams and gives QA/QC departments a documented basis for equipment validation.

Frequently Asked Questions
What food materials can a paddle dryer process?
Confirmed applications include starch, modified starch, DDGS (dried distillers grains with solubles), rice bran, fish meal, spent grain, and calcium carbonate used in food-grade processing. The machine handles materials ranging from pastes and cakes to granules and powders, provided the product is compatible with indirect conduction heating.
What is the difference between SS304 and SS316 for food-grade paddle dryers?
SS304 is suitable for dry, non-corrosive food powders such as starch and grain products. SS316 and SS316L are specified for products with chloride content, acidic pH, or where pharmaceutical-adjacent cleanliness standards apply (fish meal, fermentation-derived materials, nutraceuticals). The choice is application-specific, not a cost-based default.
Can a paddle dryer handle heat-sensitive food ingredients?
Yes – through the vacuum configuration. Operating at reduced chamber pressure lowers the boiling point of moisture, allowing drying to proceed at temperatures below 60°C. This is suitable for enzymes, probiotics, spice oleoresins, and certain nutraceutical actives. Standard atmospheric configurations operate at higher temperatures and are not recommended for these materials.
What cleaning procedure is used for food-grade paddle dryers?
The machine is designed for CIP (clean-in-place) compatibility. Access ports are positioned to allow cleaning medium circulation. The fully enclosed design prevents external contamination during cleaning. Electropolished internal surfaces minimize microbial adhesion and reduce cleaning time between product changeovers.
Is a trial run possible before purchase?
Yes. AS Engineers offers paddle dryer rental for trial batches. This is specifically useful for food manufacturers who need process data before internal capital approval, or for QA teams that require a validated process before equipment qualification sign-off.
