Paddle Dryer in Food Industry
Our hygienic design specifications prevent cross-contamination and meet the safety regulations. We have paid special attention to easy accessibility for cleaning purposes.

Cooling
Remove heat from a process mass with cold water or glycol (up to to -40 °C) in a controlled moisture-free environment. Dual-zone temperatures are also possible in the system.

Roasting
We have custom-design Paddle Dryers where you can roast the starches and grains to weaken their gas holding capacities.

Heating
Heat a process mass for tempering, cooking, or pasteurization. The heating medium can either be Steam, a circulated Thermal Fluid, or Hot Water.
We provide a fully enclosed Paddle Dryer that ensures safe and hygienic handling of food products. Additionally, our design pays special attention to provide accessibility for cleaning and maintenance purposes. We also provide end-to-end customization for the Paddle Dryer that fits your needs and serves your purpose.
Common Applications of Paddle Dryer in the Food Industry
- Roasting of starch
- Sterilization of animal feed
- Denaturing flour
- Blending and thermal processing
- Cooling hygroscopic beverage powders
- Tempering fat containing products
- Toasting
- Cooking
- Melting
Drying Starch
Paddle dryers can be used for a variety of applications, including drying modified starch. Unlike native starch, modified starch should be kept at a certain degree of temperature while drying in order to attain the desired characteristics.Similar approach is undertaken while processing Wheat. The Paddle Dryer is used as a reactor to weaken the Wheat’s gas holding capacity. In another reactive method, Wheat powder is roasted, which enables it to be used in food products.
Sterilizing Animal Feed
A challenge for fodder is the partial sterilization of animal feed, or additives. While processing the animal feed, the target is to reduce the amount of microorganisms below a critical limit. This can be achieved by increasing the product’s temperature to 75–80 °C from room temperature. In order to accelerate the desired reduction in bacteria, steam is fed into the process. The paddle geometry and alignment is adjusted to ensure optimal residence time and even transport of the product through the machine.
AS Engineers’ Paddle roaster/cooler lies at the heart of the process. The Paddle Dryer has a heated or cooled trough that contains heated or cooled paddle shafts which are allowed to rotate. The product inside the dryer bed comes in total contact with the walls of the shafts, trough, and the paddles, thereby heating or cooling the product evenly. The feed is pushed continuously into the front of the machine. The trough leans towards the unloading position slightly being oriented at a low angle of inclination. This makes the product move towards the outlet via gravity. The paddles inside the Paddle Dryer are designed for maximum heat transfer even when they do not have any transport function. The product exits from the machine via the overflow unit on the outlet side.
Our paddle roaster/cooler, with its low rotation speed of the paddle shaft and indirect roasting or cooling principle is responsible for the equipment’s zero substance emission. However, if one wants to use a gas cleaner, like a gas scrubber or gas filter, one can keep the size small due to the low gas flow rates. Once this heating and cooling process is completed, the final dried product is packed in bulk bags.

Paddle Dryer Applications in the Food Industry
In the food industry, paddle dryers are invaluable tools for various applications, ensuring efficient and consistent drying processes. These versatile machines are widely used for drying different food products, including milk powder, starch, cocoa, flour, sugar, hazelnuts, and all kinds of powders and granules. Let’s explore each of these applications to understand how paddle dryers are vital in the food manufacturing process:
Milk Powder: Paddle dryers are essential in the production of milk powder. They efficiently remove moisture from liquid milk, transforming it into a fine, shelf-stable powder. Precise temperature control and even drying ensure that the milk’s nutritional value and flavor are preserved, resulting in high-quality milk powder ready for packaging and consumption.
Starch: Starch, a common ingredient in various food products, often needs to be dried to the desired moisture content. Paddle dryers excel at evenly drying starch, preventing clumping and ensuring consistent quality. This dried starch is then used in a wide range of food applications, including thickening sauces, making bakery products, and manufacturing snacks.
Cocoa: Cocoa beans are processed into cocoa powder and cocoa butter. Paddle dryers play a crucial role in this process by efficiently drying cocoa nibs and reducing them to cocoa powder. Precise drying helps preserve the rich cocoa flavor, making it ideal for use in chocolate production, baking, and beverages.
Flour: Paddle dryers are used in the food industry for drying various types of flours, such as wheat flour, cornflour, and rice flour. Consistent drying prevents clumping and extends the shelf life of these essential baking ingredients. High-quality dried flour ensures that the final baked goods have the desired texture and taste.
Sugar: Sugar, a primary ingredient in many food products, requires drying to control moisture levels. Paddle dryers effectively remove excess moisture, preventing sugar crystals from sticking together. This ensures that sugar remains free-flowing and ready for use in baking, confectionery, and beverage production.
Hazelnuts: Paddle dryers are used to dry hazelnuts and other nuts, enhancing their shelf life and improving texture. Controlled drying prevents spoilage and maintains the nut’s natural flavor and aroma. Dried hazelnuts are widely used in baking, confectionery, and as a nutritious snack.
All Powders and Granules: Paddle dryers are versatile enough to handle a wide range of food powders and granules, ensuring uniform drying without compromising product quality. Whether it’s spices, seasoning blends, or food additives, paddle dryers play a crucial role in maintaining the desired characteristics of these food ingredients.
In summary, paddle dryers are indispensable in the food industry, offering precise and consistent drying solutions for a variety of food products, including milk powder, starch, cocoa, flour, sugar, hazelnuts, and all types of powders and granules. Their ability to control moisture levels, prevent product degradation, and maintain food quality makes them a vital asset in food processing and manufacturing. For food businesses, investing in paddle dryers is a strategic choice to ensure the highest quality of food products for consumers
